CAFE RIO DINNER
This is not the exact recipe...I have ate the real thing enough to know...But it is pretty good
I buy the Country Pork Ribs at Costco. You can buy pork shoulder, or Pork Roast. They all work too.
I like to trim any fat off the meat that I can see.
In a Crock Pot, cooking on low:
Pork
2 Cans of COKE
2 Garlic Cloves
Salt and Pepper
Cook on low until meat falls apart.
The ribs cook up the fastest. About 6-8 hours.
Remove with slotted spoon(see Pic. above).
Discard drippings and return pork to vessel.
Add 1 Large Can Green Chili Enchilada Sauce
1/2 Cup Brown Sugar
This is a simple recipe. I have heard of adding Dr. Pepper to the Sauce?
If you Google Cafe Rio Pork there are a lot of variations.
Cafe Rio Rice:
Cook 4 Cups Minute Rice...Add 3 Bullion Cubes to Water..
Bring Water to Boil...Add Rice...Cover.
In another pan...Sweat (do not brown):
1 T Olive Oil
1T Butter
1/2 Onion (equivalent to 1/2 cup)
2 garlic cloves chopped. (sometimes I use the minced garlic in a bottle)
Add 1/2 Cup Chopped Green Chilies(I use 2 - 4 oz. cans or 1 - 7oz. can)
1 cup chopped Cilantro
Do not add more Salt... The Bullion is Salt Enough!
Cover until ready to serve.
Creamy Cilantro Dressing:
1 Pkg. Hidden Valley Buttermilk Ranch Dressing mix
1 Cup Buttermilk
1Cup Mayo
1-2 Tomatillos Peeled
1 Minced Garlic Clove
1/3 Bunch Chopped Cilantro
1 t Fresh Lime Juice
1 Small Jalapeno
Blend until smooth.
OK...Now here is the Easy Version:
2 Cups Ranch Dressing
1 Jalapeno
1/3 Bunch Cilantro
1 Garlic Clove
Blend until smooth. WAH LAH!
OK now here is the trick to YUMMY....
Use:
UNCOOKED TORTILLAS!
You can buy these pretty much at any grocery store now.
They are refrigerated.
Cook them in a heated skillet on both sides. Really Good!
Tastes much fresher than the normal tortillas that you can buy.
Serve fresh tortilla with rice, heated canned black beans, cheese, pork, lettuce and chips piled up like a salad, or as a pork taco with pork, cheese, sour cream, etc.
