My Mom's Cinnamon or Orange Rolls:

You can make this recipe Orange Rolls, Cinnamon Rolls, or cut down the
sugar for a light and fluffy Dinner Roll.
In a large bowl mix:
1 1/2 c lukewarm water
2/3 c sugar
1 1/2 T salt
Add:
1 heaping T. yeast and stir until dissolved.
Add:
2 eggs
2/3 c soft shortening (melted but not hot)
1 c lukewarm mashed potatoes
(instant is fine mixed with water only until right consistency)
Mix in 6-7 c unsifted flour and knead.
Add flour until you can knead it.
The stickier the better.
Cover and refrigerate for 2 hrs or overnight.
(will keep in refrigerator for up to 5 days).
Roll out on floured surface to a large oblong shape
About 1/4-1/2 inch thick.
Mix together and spread on top of dough:
1 c. sugar
2/3 c melted butter
Zest of 2-3 oranges.
If you want cinnamon rolls:
1 c sugar
2/3 c melted butter
2 T. ground cinnamon.
Roll up and pinch closed. Cut into 1" slices.
Place rolls on buttered pan.
Let rise until desired size. (pretty big).
Bake 375* for 10-15 min. until golden brown.
Frost when cool:
1 bag pwd sug.
1/2 c butter (soft)
1 cube cream cheese (soft)
1 t vanilla
canned milk until right consistency.
*zest of 1 orange(if making Orange Rolls)
You can freeze these rolls after cutting(before rising) on a cookie sheet
for 2 hrs. then transfer them into air tight bag.
Freeze until ready to rise.
